I haven't thought this out yet, but personally my first instinct would be to put the plant class(es) in one header/source pair and the animal classes in another. The animals are all fairly closely related, so there shouldn't be a strong need to separate them all into their own files.

You'd probably also want to separate the abstract base classes from the concrete plant/animal classes.
